Breakfast meals are based on three components offered that include four items:

- Grain - component #1
- Must offer a minimum of 1 serving of whole grain per day
- All grain offerings must be whole grain
- Fruit - component #2
- Must offer a minimum of 1 cup of fruit per day
- Milk - component #3
- Must offer two types of milk
- Flavored milk must be non-fat
- Nutrient Requirements
- Minimum and Maximum calorie requirements
- Saturated Fat requirements
- Sodium Requirements
- Zero Trans Fats
- A reimbursable breakfast is when a student takes any three or four items - a student can take all components if they choose AND the student MUST take a minimum of 1/2 cup of fruit.

Lunch meals are based on five components offered:

- Meat/Meat Alternate - component #1
- Must offer a minimum of 2 oz. meat/meat alternate per day
- Grain - component #2
- Must offer a minimum of 2 servings of grain per day
- All grain offerings must be whole grain
- Fruit - component #3
- Must offer a minimum of 1 cup of fruit per day (from two sources)
- Vegetable - component #4
- Must offer a minimum of 1 cup of vegetables per day (from two sources)
- Vegetable sub-groups are offered, including – red-orange, dark green, legume, and starchy
- Milk - component #5
- Must offer two types of milk
- Flavored milk must be non-fat
